Well, on those days, where the hot chocolate just isn't doing it for me, I found this recipe for chickpea brownies. I leave out the oil. I use Aquafaba (chickpea juice) from the chickpeas instead of the oil and they turn out perfectly. I also use coconut nectar for the sweetener as it is low glycemic. For Chocolate chips, I use Lily's brand vegan chocolate chips as they are sweetened with stevia.
I don't consider these to be the healthiest option. But they are a nice treat, every once in a while. I always like to start with a base recipe and then change it for my needs, but I didn't have to change much with this one! If you are interested in some healthy brownies. Check out the link below.
